It's almost time for one of our favorite holiday's at KG, Thanksgiving. We love any excuse to dress up, but what we love even more is seeing our families at dinner and enjoying all of those lovely home cooked dishes.

When we think of Thanksgiving, we usually think of turkey, stuffing, and a cylindrical purple gelatinous glob which we wholesomely refer to as 'cranberry sauce'. Whatever your favorite dish may be, chances are there is a pre-existing recipe you already love. That's where we come in-- we like to be ~different~, so we've enlisted our resident... different person, Grace, to compile a list of her favorite dishes to bring to a vegetarian Thanksgiving. (absolutely bonkers, we know)


As someone who has both a background in food and a number of vegetarian family members in the double digits, there can be a lot of pressure around this time of the year to really show out. Not only is there pressure to make something everyone loves, if you succeed at it, you're now expected to bring it each year, less you mind being a disappointment (joking!)


I've loved making a vegetarian shepherd's pie the past few years-- it's relatively simple, forgiving, and a huge hit with both the veggie and meat eaters. I find substituting the lentils for any sort of mock-meat is delicious!

If that's not your style, a vegan pumpkin risotto is something that encapsulates ~autumn~ -- squash is a delicious and versatile flavor that works perfectly in this rendition of the classic Italian dish.

I love eating soup at Thanksgiving, and this curried carrot and turnip soup is not only scrumptious, but the color is amazing! The ginger adds a beautiful freshness to the richness of the soup, and don't be scared of the curry powder-- it's not spicy!

Now, this one will be a bit spicy. To cover our greens for the night, this roasted apple salad with spicy maple-cider vinaigrette is sure to hit all the marks. This combo of flavors is sweet, savory, spicy, and surely delicious.



I'm looking forward to seeing all of my family this Thanksgiving and share all of my favorite fall foods with them. What's your signature dish for the holiday season?
